Pectolase (Pectin Lyase) is a naturally occurring Pectinase enzyme produced from Fungi for the food industry that safely and effectively eradicates the naturally occurring Fruit-Starch Chemical "Pectin" from fruit that holds and binds the molecules together. The resulting action of adding Pectolase degrades the Pectin and thereby releases more flavour from the fruit and stops Pectin Haze occurring, safe effective and Natural . . . . Useful stuff that goes a long way! Just add 1 level teaspoon per gallon.
