As we know, Oak storage barrels have for years contributed to the Rich, Mature, flavour associated with good "Oak Aged wine," a similar likeness can now be achieved by adding French Oak Chips to the must at the start of Fermentation. Some wine kits provide them in with the kit but in case your wine needs them always keep a spare packet or two in your brewing cupboard, it's surprising what a difference they make.
